Why we bake with sourdough

Bread is the foundation of our offer. What sourdough does to the flavour, the crust and the life of a loaf.

Shaping sourdough on a floured table

The foundation of our offering is our breads: from our signature miso bread to classic sourdough loaves and fluffy brioches. We take the utmost pride in the quality of our bread.

Time as an ingredient

Sourdough is a living culture of wild yeasts and lactic acid bacteria. Dough made with it matures more slowly than with commercial yeast, and that time gives it a deeper, gently tangy flavour, a sturdy crumb and a pronounced crust.

A loaf that lasts

Sourdough bread stays moist for longer, so it keeps for several days. That is also why we deliver it every day to restaurants and cafés across Prague.
